If the stop is made after 3 consecutive weeks of taking continuous medication, it is normally not possible to get pregnant. If the stop is more than 7 days (so 8 days and more), the risk is increased. When the interruption is only 7 days, the protection is normally still valid.
Do you have any doubts about a potential pregnancy at this time?

no I don't have any doubts right now. I took my last pill of my 21 days on Saturday night and had sex on Sunday night. I was wondering if I was at risk since I am not on the pill for 7 days. I'm wondering how I can be protected when I'm not taking anything.

So you are not at risk. What makes the pill still work for those 7 days is a combination of factors. First, you have not ovulated. Since you are taking a pill that prevents ovulation (anovulant), there is no risk of conception. Bleeding that occurs during this period is mistakenly called menstruation. They are more like withdrawal bleeding from the pill. Secondly, a fertilized egg (even if it is highly unlikely) could not implant on the mucosa that has not been "prepared" hormonally speaking
